My Favorite DS Recipes

These are all ones I have tried and recommend, not ones I have come up with myself. My personal recipes (ones from my family or that I came up with on my own) will be at the bottom.

Brok's Pizza

This is a breadless pizza that you can make high in protein and fat -- perfect for a DSer! You can mix it up and use any cheeses you like.

Makes 8 servings and can be frozen!

Ingredients:


8 ounces mozzarella cheese, shredded
4 ounces cheddar cheese, shredded
3 eggs 
1 teaspoon garlic powder
1 teaspoon basil, optional
Toppings of your choice

Directions:

1.) Mix the cheeses, eggs, garlic powder and basil well.
2.) Line a 16-inch pizza pan, or pie pan, with parchment paper or nonstick foil. Evenly spread the cheese mixture in the pan, almost to the edge, making it as thin as possible.
3.) Bake at 450º 15-20 minutes until golden brown.Check it after about 10 minutes. If it's getting very dark on the edges and top, turn the oven down to 400º and continue baking until brown all over and no longer pale on the bottom.
4.) Add your toppings.
5.) Put the pizza under the broiler until the toppings are hot and any cheese you added is melted and bubbly, about 4-5 minutes.

 Low Carb Cheesecake

 Servings: 16 Slices

Ingredients -

Crust:
  • 1.5 cups Almond Flour
  • 6 Tbsp Splenda
  • 5 Tbsp unsalted butter, melted


Filling:
  • 24 ounces cream cheese, softened
  • 1.5 cups Splenda
  • 3 eggs, room temperature
  • 2 tsp vanilla extract
  • 1 tsp lemon extract
  • 16 ounces sour cream
Directions -
Crust:
1.) Mix splenda and almond flour with melted butter.
2.) Press onto bottom of a 9-inch springform pan and 1.5 inches up the sides.
3.) Set aside while making the filling.

Filling:
1.) Beat the cream cheese until it is light and fluffy, while keeping the mixer on a low setting.
2.) Add the splenda a little bit at a time, while still beating until creamy.
3.) Add one egg at a time and beat very briefly after each egg.
4.) Add vanilla when eggs have been mixed and only mix until blended.
5.) Add sour cream and mix briefly.

Baking:
1.) Preheat oven to 325 degrees.
2.) Pour filling into the springform pan.
3.) Place into oven and bake for 1 hour and 15 minutes. Check it before an hour is up and if it is getting brown, turn the oven off and begin the next step.
4.) After baking, turn the oven off, prop open the oven door and leave it in the oven for one hour.
5.) Remove from oven.
6.) Cool to room temperature and then chill for 24 hours before serving.

Easy Oven Baked BBQ Chicken Drumsticks


You can use any kind of chicken that fancies you for this but for more flavor, chicken with skin will be the better choice. But if you're on a budget, any chicken on sale works :) I have personally tried it with boneless, skinless chicken thighs and drumsticks with skin and both tasted wonderfully. The recipe is for chicken drumsticks so adjust oven accordingly to what you make! Also, this is more of an informal recipe, in that there are no measurements of ingredients, so use as much as you like. Enjoy!

Ingredients:
  • Melted butter
  • BBQ sauce (I used Jack Daniel's)
  • Garlic Powder
  • Salt
  • Pepper
  • Chicken
Directions:
1.) Preheat oven to 350 degrees.
2.) Grease a baking sheet.
3.) Add salt, pepper, garlic powder, melted butter, and BBQ sauce to both sides of chicken drumsticks and place on baking sheet.
4.) Bake in oven for 40 minutes. Rotate drumsticks at 20 minutes.

Crockpot Bacon Chicken and Cheese

 Ingredients:
  • 2 Tbsp Olive Oil
  • 4-6 chicken breast halves 
  • 12 pieces of cooked and crumbled bacon
  • 1/4 cup teriyaki sauce
  • 1/2 cup Ranch salad dressing
  • 1 cup shredded cheddar cheese
Directions:
1.) Put the Olive Oil in the bottom of the crock pot and swirl it around.
2.) Put the chicken in the crock pot, on top of the oil.
3.) In a bowl, combine the teriyaki sauce and ranch dressing.
4.) Pour sauce over chicken.
5.) Pour the cheese in.
6.) Pour the bacon crumbles in.
7.) Cover and cook on low for 6-8 hours on low, or 3-4 hours on high.

Easy Teriyaki Grill Burgers

My father used to make this a lot for me growing up. After my DS, I turned it into a low carb recipe for myself by throwing away the bun. It is great because it can be a meal for the family and yourself!

Ingredients:
  • Teriyaki Sauce of your choice (I used Kikkoman's)
  • Ground Beef
Directions:
1.) Form meat into burger patties of desired portion (or buy pre-made ones).
2.) Place patties in a ziploc bag and pour desired amount of teriyaki sauce and close bags.
3.) Marinate in refrigerator overnight.
4.) Place on grill and enjoy!

Lisa's Easy Applewood Bacon Green Beans


 Easy side dish to accompany a good main dish. Can make an individual or family serving.

Ingredients:
  • Frozen or fresh green beans
  • Applewood Bacon
  • Bacon grease
  • Garlic powder
  • Pepper (optional)
Directions:
1.) Boil Green Beans.
2.) Drain green beans and set aside.
3.) Fry up one slice of applewood bacon per serving.
4.) Break up or slice up applwood bacon into pieces.
5.) Place green beans in a nonstick skillet on low with an appropriate amount of bacon grease.
6.) Add desired amount of pepper and garlic powder
7.) Add bacon crumbles
8.) Stir 1-2 minutes.
